Coriander potato cakes

These are a cheap but tasty way of using up potatoes, either as a starter or a meal on it’s own. I first had these when I worked as a support worker in the community. One of the Mum’s who originally came from India fried these up and would give me many in foil, despite me saying I was OK for food! (What is it with the Mum instinct and wanting to feed everyone within their radius?! )


450g Potatoes (I used white variety but sweet and purple would also work)
2 egg yolks
75g grated cheese
2-3 spring onions
handful of fresh, chopped coriander

Boil the potatoes until soft. Drain and mash the potatoes. Add the egg yolks (save the whites for meringue, recipe coming later!), cheese, chopped spring onions and chopped coriander. Mix together, then form small patties, fry in a medium heat frying pan until brown and crisp on the outside. Serve and enjoy!
