Broccoli Pesto

This is a quick, cheap way to liven up your pasta. The recipe makes plenty of pesto, I like to divide it up into potions and freeze to make quick meals when I am time poor.


1 head of broccoli
1 clove of garlic
3 Tbs pine nuts
5 Tbs oil (Olive oil if you have it but sunflower oil or vegetable oil also works)


Cut the broccoli into florets and add to a pan with salted, boiling water Cook until tender. Drain then set aside to cool.

Mince and fry off the garlic, then leave to the side to cool.

In a dry pan, toast the pine nuts.

Add the ingredients together and blend until a smooth pesto is formed. Season with salt and pepper.

Add to cooked pasta, I also like to add a few capers to the pasta and pesto for extra flavour.
