African Style Peanut Stew


I love this meal, it is tasty easy to make and filling. I serve with brown easy cook rice

Ingredients

2 heaped desert spoons of crunchy peanut butter
1 heaped tsp tomato puree
1 tsp chili flakes
1 small white onion
1 clove garlic
300ml vegetable stock
500g sweet potatoes
50g kale

Method

Chop up the onion and garlic.
Add a little oil to a frying pan and put the onions and garlic into fry until the onions turn translucent.
Add the peanut butter and chilli flakes to cook for 2 minutes.
Meanwhile, peel and chop up the sweet potatoes.
Add the sweet potatoes, stock and tomato puree.
Simmer until the sweet potatoes start to become tender then add the kale.
The sauce will thicken as it cooks, if it becomes too thick you can add more water to loosen it up.
Once cooked serve with boiled rice.
